Raw food is all the rage in Tokyo, with areas like Ebisu and Akasaka already boasting multiple restaurants specialising in grub prepared at temperatures under 48 degrees. Ginza's moneyed masses got their own temple to uncooked nourishment in May 2015 with the opening of this café, run by the Japan Living Beauty Association, which aims to reduce natural resource use to a minimum: artificial additives, chemicals, sugar, dairy and gluten are all off the table, while all containers and packages are recycled. Surely worth a visit for detoxers and health fanatics.
