The speciality at this 24-hour Korean restaurant in Akasaka is seolleongtang, a milky soup that’s made from pretty much every piece of the cow you’d care to mention, including stewed ox bones, innards and brisket. The resulting dish is a hearty, soothing broth that’s not too hard on the stomach – even at 6am. Start by tasting the soup before seasoning with salt and pepper, then add your choice of garnishes, such as kimchi. Complete the meal with a portion of rice for the perfect cure to a hard night’s drinking, or as a restorative dinner the next time you're feeling under the weather.
