What's collectively known as 'new Nordic cuisine' has been all the rage in Tokyo this winter and spring, with Noma's mother of all pop-up restaurants at the Mandarin Oriental obviously grabbing the top headlines. Still, most of us weren't lucky enough to be invited to that party, which makes these special offerings at Aoyama's Aquavit all the more appetising. The restaurant's original NY location was awarded a second star in the most recent Michelin guide, so they're celebrating with a new tasting menu packed with creations making waves in the Big Apple.
