Review

This shop is known in Sugamo as 'that place with the long queue'. There's the 'Shoyu (soy sauce) soba' (¥750) with a clear soup made of kelp, pike fish, and clam stock added to a chicken base and naturally brewed soy sauce; 'Shio (salt) soba' (¥750) with a salt-based sauce blended into the same chicken base and seafood stock used in the soy sauce version; and 'Miso soba' (¥800) with Tokushima-made soy bean miso added to a chicken soup base. All three varieties maintain a high quality: the soup, noodles, and other ingredients are all wonderfully balanced in each dish, and they all leave a first-rate aftertaste. This shop offers one of the city's best examples of 2013's tanrei (signifying a clear, simple taste) trend.
