Noodle shops like this have all but disappeared from Tokyo: open only during lunch, Yamada serves up old-style miso ramen in a dashi soup base – the only original feature here is the optional pork cutlet topping, a meaty choice that serves big eaters very well. Make the trip prepared to wait – the shop only seats a handful of customers, so queues regularly form outside.
