Chef Etsuko Yamada's stylish Japanese cuisine is not as formal as kaiseki, but it is far more sophisticated than regular home cooking. She has a very creative modern touch that reflects the restaurant’s innovative setting: a converted 30-year-old, metal-frame workshop tucked away down a narrow alley in this very traditional neighbourhood.
