Fusuma is the Japanese word for bran, the hard outer layers of grains. Opened in September 2014, Fusubon Shop specialises in fusuma bread, which is highly nutritious, packed with fibres and low on sugar content, making it perfect for dieters and others looking to control their carb intake. These creations are soft, tasty things that come in forms ranging from bagels to buns, some of which contain extra vitamin boosts in the form of cranberries or acai. Best enjoyed as plentifully filled sandwiches, bran bread just might be the next big thing on Tokyo's bakery scene.
