Miuraya prepares its hitsumabushi in a decidedly Kansai-esque style, grilling it without steaming and then finishing it off with a sweet sauce. The eel itself isn’t particularly thick, however, and the serving of rice is on the small side, so if you’ve ever tried the real thing you may be left a little disappointed.
