Review

Shina soba (Chinese-style noodle soup) restaurant Koya originally started as a food stand, but now has 90 seats and serves noodles and small dishes. Shina noodle soup and a generous won-ton noodle soup are found on the menu. Soup for noodles is made of 80 per cent pork stock, 20 per cent chicken stock and a little bit of salt, with no unnecessary additives, which results in a simple and pure taste. The restaurant uses a special flat, curly noodle which is thinner than the Kishimen noodle. In the back of the restaurant there is a Japanese-style room with tatami floor. It’s a good idea to enjoy a few drinks in the back room before moving through to the front for a bowl of ramen.
