Challenging kakigori, pancakes and other summery Tokyo favourites, Shibuya cafés Bohemia and Udagawa Bekkan are trying to start a new dessert trend with yaz salatasi, a seasonal Turkish salad incorporating watermelon, spearmint, feta cheese and mint for a certifiably fresh and light taste. It might not become an instant hit, but this one sure looks like it could make waves among the health-conscious crowd.
