If you're looking for a serious pedalling challenge, then this should be the event for you: Mount Fuji Eco Cycling takes you on a 120km course around Japan's highest peak, all in one day. There's also a 20km option for kids and less sporty individuals, while the day before the actual event will see talks and other events on the theme of environmental protection take place on the shores of Lake Yamanaka. Note that all cyclists need to sign up by August 20, and registration closes as soon as the maximum number of entries has been reached.
