Japan’s most Zen city still has several restaurants that serve the monks’ traditional meatless meals. This one, in a beautiful building that once belonged to Kodai-ji, offers fucha ryori, a rich, multi-course cuisine with hints of Chinese influence. The menu varies by the season, but always includes their specialities: miso-covered aubergine and gomadofu, a tofu-esque creation made from ground sesame. Reservations essential.
