Like so many Kyoto restaurants, Yorozuya has built its business on the reputation of one special dish. Negi udon is a bowl of noodles served in a rich bonito broth, topped with chopped spring onions - but this joint smothers its noodles in a mountain of them. Luckily, they blanch them first to temper the flavour.
