One of the city’s ramen landmarks is housed in a gorgeous machiya that couldn’t be further removed from the brash interiors of many ramen joints. The signature kogashi (burned) ramen is a hearty, full-bodied dish with a soy- or miso-based soup that has been flambeed in 300°C lard. Other menu items reflect the store’s roots in the southern island of Kyushu, which is renowned for its raw horse meat.
