It is possible to tour this factory, which produces a variety of miso products (made primarily of rice and soy beans) as well as soy sauces (made of wheat). The miso is made in 80-year-old wooden barrels, each of which can hold three tons of miso. In the Edo Period, Kanazawa had the fourth largest population in Japan, which is why so many soy sauce breweries sprang up here; there are now 26 such breweries in Kanazawa. Don't miss trying Yamato's ice cream soy sauce. When combined with brown rice ice cream, it imparts a wonderful caramel flavor. You can pour it on and mix it yourself or go for the already blended variety.
