When it comes to cuisine, Kyushu’s love of tradition and its foreign leanings come together beautifully. You can flit between a classic Japanese hotpot and sashimi at a traditional izakaya (‘pub’), to getting involved in a Korean barbeque and even enjoying local burgers (‘sasebo’) and sponge cakes (‘castella’) both of which have been adopted and adapted by the islanders.

But the island doesn’t just imitate, it innovates and here we tell you how to experience some uniquely Kyushuan cuisine.
